VEGETABLE SCRAMBLE

INGREDIENTS:

  • 2 eggs

  • 1/2 bell pepper (diced)

  • 1/4 onion (diced)

  • 1/2 cup spinach (or any leafy greens)

  • 1 tsp olive oil

  • Salt and pepper, to taste

  • Red pepper flakes (optional)

INSTRUCTIONS:

  1. Heat the Pan:
    Place a non-stick skillet over medium heat and add the olive oil.

  2. Sauté Vegetables:
    Add the diced bell pepper and onion to the skillet. Sauté for 3-4 minutes until they soften. Then, add the spinach and cook for an additional 1-2 minutes until wilted.

  3. Scramble the Eggs:
    Crack the eggs directly into the pan over the vegetables. Season with salt and pepper. Stir gently, mixing the eggs with the vegetables. Cook continuously until the eggs are fully set, about 2-3 minutes.

  4. Serve:
    Once the eggs are scrambled to your liking, remove the skillet from the heat. Transfer the vegetable scramble to a plate and serve warm.
