STREUSEL PEACHES WITH CREAM

This recipe is 100% inspired by Radhi Devlukia-Shetty. The portions have changed, but I cannot take full credit for this delight. Thank you, Radhi!

INGREDIENTS

  • 3 peaches (cut in half and seed extracted)

  • 1/3 cup almond flour

  • 1/3 cup oat flour

  • 1/4 cup rolled oats

  • 1/3 cup chopped pecans

  • 1/3 cup butter (use any butter you’d like. I use my own or Irish butter)

  • 1/4 cup coconut sugar

  • 1 tablespoon cinnamon powder

  • handful of chocolate chips

PREP

  • Add all the topping ingredients (except the chocolate chips) in a bowl and mix

  • Add the chocolate chips after you’ve mixed everything. Make sure you do that last. You don’t want the chips to melt in the mixture.

  • Take a cast iron pan or baking tray and grease it with butter.

DIRECTIONS

  • Preheat the oven to 300 degrees

  • Place peaches into a cast iron pan or a baking tray and generously place a scoop of the topping onto each of the peach halves. Put as much as you want in there.

  • Place in the oven for about 20-30 minutes till the peach is soft and fork tender and the topping is browned.
