CHERRY TOMATO BUTTER BEAN PESTO

I want to share this absolutely delicious meal that I eat for lunch, and sometimes dinner if I don’t feel like doing much prep. This meal is so filling and has the most robust flavors.

INGREDIENTS

  • Bread of any choice

  • 1 can of butter beans - make sure you rinse them.

  • 4 cherry tomatoes - cut them in half

  • Cottage cheese

  • 1 cup of argula or any other green you’d prefer

  • 2 garlic cloves

  • Butter and olive oil

  • 1 tablespoon red pesto

  • 2 tablespoons of red wine vinegar

  • SPICES 1 teaspoon each of garlic and onion powder

  • A little salt and pepper to your taste

DIRECTIONS

  1. Put minced garlic and olive oil in the pain with spices and cook until soft.

  2. Add the cherry tomatoes and greens and cook until soft

  3. Add the red wine vinegar and pesto (you can add 1 more tablespoon to give even more flavor)

  4. Add the butter beans and cook the mixture for 2-3 minutes.

  5. Toast your bread. I love toasting it with butter in a pan on both sides.

  6. Add the cottage cheese and the put the mixture on top

  7. Drizzle a little olive oil on it and viola! You are ready to enjoy your meal!
