BANANA NUT BREAD

INGREDIENTS

  • 2 to 3 medium very ripe bananas, peeled (about 1 1/2 cups mashed)

  • 1/3 cup butter, unsalted or salted, melted

  • 1/2 teaspoon baking soda (not baking powder)

  • 1 pinch salt

  • 1 cup sugar (1/2 cup if you would like it less sweet)

  • 1 large egg, beaten

  • 1 teaspoon vanilla extract

  • 1 1/2 cups all-purpose flour

  • 1/2 chopped or crushed walnuts (optional)

PREP

  • Preheat the oven to 350°F

  • Make sure you have a mixing bowl

  • You will also need a loaf pan - GREASE THE PAN WITH BUTTER

 

DIRECTIONS

  • Mash the bananas and add the butter (in the mixing bowl)

  • Mix in the remaining ingredients

  • You do not need a blender or mixer. Just a spoon.

  • Pour the batter into your prepared loaf pan.

  • Bake for 55 to 65 minutes at 350°F, or until a toothpick or wooden skewer inserted into the center comes out clean.

  • Remove from oven and let cool in the pan for a few minutes. Then remove the banana bread from the pan and let cool completely before serving. Slice and serve.

optional for icing

  • 1 block of original cream cheese, softened

  • 4 tablespoons of butter, softened

  • 1 cup powdered sugar

  • 1/2 cup of shredded coconut

Put this in the mixing bowl and blend - THIS MUST BE DONE WITH A MIXER

Once your icing is ready, you can spread (on top) on the bread once its cool and add a few walnuts to the top for a bougie aesthetic!
