BANANA NUT BREAD
INGREDIENTS
2 to 3 medium very ripe bananas, peeled (about 1 1/2 cups mashed)
1/3 cup butter, unsalted or salted, melted
1/2 teaspoon baking soda (not baking powder)
1 pinch salt
1 cup sugar (1/2 cup if you would like it less sweet)
1 large egg, beaten
1 teaspoon vanilla extract
1 1/2 cups all-purpose flour
1/2 chopped or crushed walnuts (optional)
PREP
Preheat the oven to 350°F
Make sure you have a mixing bowl
You will also need a loaf pan - GREASE THE PAN WITH BUTTER
DIRECTIONS
Mash the bananas and add the butter (in the mixing bowl)
Mix in the remaining ingredients
You do not need a blender or mixer. Just a spoon.
Pour the batter into your prepared loaf pan.
Bake for 55 to 65 minutes at 350°F, or until a toothpick or wooden skewer inserted into the center comes out clean.
Remove from oven and let cool in the pan for a few minutes. Then remove the banana bread from the pan and let cool completely before serving. Slice and serve.
optional for icing
1 block of original cream cheese, softened
4 tablespoons of butter, softened
1 cup powdered sugar
1/2 cup of shredded coconut
Put this in the mixing bowl and blend - THIS MUST BE DONE WITH A MIXER
Once your icing is ready, you can spread (on top) on the bread once its cool and add a few walnuts to the top for a bougie aesthetic!
