SPINACH + AVOCADO LIME DRESSING
This is my absolute favorite dressing. It is my personal rendition of the green goddess salad dressing. I am not a fully a green goddess dressing lover, but I do love my greens. This dressing stays in rotation at my home. I love the tanginess of it and the robust flavor it brings to my bowls. I know you will enjoy it too!
INGREDIENTS
2 medium very ripe avocados (about 1/2 cups mashed)
1/2 teaspoon of salt and pepper mixed.
1/2 cup of olive or avocado oil
1/2 squeezed lime juice
1 garlic clove (I always use 2-3 cloves. I love garlic!)
1/2 cup of sour cream OR plain yogurt (I always use plain yogurt)
1 cup of spinach (you can even do 1/2 cup more, I do)
Pour a little water. About 4 tablespoons to start.
EXTRA - If you want to have a cheese flavor add 1 tablespoon of nutritional yeast
Sometimes, I will grind some pepper and add a pinch of salt. It’s really important to taste as you go!
PREP
You need a blender or food processor
Make sure you have a container (preferably glass container) that you can put your dressing in when done.
DIRECTIONS
Combine all the ingredients in the blender and blend for 30 seconds. You may have to blend more until you reach your consistency.
You can add other spices if you’d like. Just make sure you stop and taste it along the way.
Once it is complete. Add the mixture to a glass container or glass bottle to store in your fridge. It lasts for approximately 2 weeks!
