BLUEBERRY OAT BARS

This recipe will make a small batch of oat bars.

INGREDIENTS

  • 2 cup of rolled oats

  • 1 cup of oat flour

  • 1/2 cup of peanut butter (or a little more if you want)

  • 1 cup blueberries

  • 1/4 cup of water

  • 1/3 cup of honey

  • 2 tbsp coconut oil

PREP

For the filling:

  • 2 1/2 cups fresh or frozen blueberries

  • 3 tablespoons pure honey

  • 1/2 cup of water

  • Optional to make the with a hint of lemon flavor: zest from 1 lemon

  • Add ingredients to a pan and cook until it makes a chutney.

For the OATS:

  • Combine all the ingredients in a mixing bowl

  • To easily mix the peanut butter, I always add the peanut butter and coconut oil together and warm in the microwave for 45 seconds - this helps the mixture come together better.

DIRECTIONS

  • THIS IS VERY IMPORTANT: The oat mixture you will have to split in half for a bottom and top layer.

  • Line the first layer of oats in a small pan - I always use a tuberware so that I can easily place it in the fridge.

  • Once you have the first layer you can add the blueberry chutney on top as the 2nd layer

  • Once that is done you will need to add the rest of the oats on top

  • Place it in a fridge to cool and harden for about 1 hour.

  • You can eat these for the rest of the week! They are sooo delicous.

 

DIRECTIONS

  • Put 1/2 cup water and gelatin in a bowl and let it sit. Just leave it be.

  • Put 1/2 cup of water and honey in the pot and heat it up for about 5 minutes. Please make sure you stir this so it can keep it’s thick consistency.

  • Go back to the bowl, you will see the gelatin thicken. Use the mixer to break it up for about 30 seconds

  • Add the contents from the pot (mixing on low) and then add the vanilla extract

  • Once it’s mixed, this is the most BORING part if you are using a hand mixer: Let it mix on high. It should take about 10-15 minutes

  • Once you have the creamy marshallow texture, you will add it quickly to the pan with wax paper and place it in the fridge for about 1-2 hours.

  • I ALWAYS use wax paper with tuberware.
