GRANNIE’S BUTTERMILK BISCUITS

This southern recipe is from my grannie. She made the most delicious biscuits and everyone loved them in our family and the restaurant where she was a cook. This recipe is packed with flavor. I hope that you enjoy these biscuits from my family to yours.

INGREDIENTS

  • 2 1/2 cups of self rising flour.

  • 1 stick of cold grated butter (equivalent to 1 1/2 cups) - I use Kerrygold Irish Butter OR butter that I make myself.

  • 1 cup of buttermilk - I use organic Kalona buttermilk OR buttermilk that I make myself

PREP

  • Preheat oven to 400 degrees

  • Make sure you have biscuit/cookie cutters. Choose the size you want for the biscuits. There is no right or wrong size.

  • Lightly grease your cast iron OR whatever baking pan you use. I personally grease mine with butter.

  • Mixing Bowl and mixing spoon (You do not need a mixer for this)

DIRECTIONS

In the mixing bowl, pour the flour and grated butter.

Take your fingers and pinch the butter and flour until it feels crumbly.

In the center of the mixture/bowl, make a circle (forming a well)

Pour the buttermilk in the center

Take your mixing spoon and stir until the dough is sticky

Turn your dough on a floured surface.

IMPORTANT: Instead of kneading, just fold the dough 3-4 times to create layers. YOU MUST BE CAREFUL NOT TO OVERWORK THE DOUGH.

Cut the biscuits out and place them in your baking pan or cast iron.

Layer melted butter on the biscuits.

Place in the oven for approximately 15-25 minutes - You need to make sure you watch your biscuits.

After the biscuits are done, take melted butter and dizzle (1 tablespoon of butter) on the top of the biscuits while they are hot, IMMEDIATELY after they are taken out of the oven.
