KALE + SPINACH ARTICHOKE SALAD

This is my absolute favorite salad. Of course I have many, but this one is always on rotation at least once or twice a week. This serving is for approximately 2-4 people. You can portion it as you’d like.

INGREDIENTS

  • 1 cup Kale

  • 1 cup spinach

  • 1 cup artichokes

  • 1/2 grated parmesean cheese (NOT from the container - REAL cheese)

  • 1/2 cup of shredded red cabbage - I personally like to mince mine.

  • 1/2 cup of olives

  • 1/2 cup of chopped cucumbers

ADDITIONS:

  • You can add chick peas and/or roasted tomatoes for more flavor

PREP

  • Take the spinach and Kale and cut it up. Add 1 tablespoon of olive oil and massage it through. It will break down the texture of the kale AND the dryness of the spinach (if it is from a bag). I usually massage it for 3-5 minutes.

  • I like to have hot roasted artichoke (even if the can says they are already cooked). Add them to a small pan and put them in the oven on 350 for approximately 15 minutes.

  • Once the artichokes are done - take them out and let them cool and then chop them up.

DIRECTIONS

  • Add all the ingredients to a bowl, mix and serve with your favorite dressing!
