MARINATED RED ONIONS
This delicious marinade recipe from NoCrumbsLeft made me fall deeper in love with red onions. I marinade these onions each week and use the oil to cook meats with as well as use for salads.
INGREDIENTS
5 tablespoons red wine vinegar
5 tablespoons of high-quality balsamic vinegar (optional but highly recommended)
1 small red onion
1 cup Extra Virgin olive oil
3 tablespoons dried oregano (not ground)
YOU CAN ADD THE INGREDIENTS TO TASTE.
HOW I MAKE IT
Thinly slice the red onion and place in a low bowl.
In a separate bowl, stir the olive oil, red wine vinegar, balsamic vinegar, and dried oregano together to combine well. Pour the mixture over the onions, making sure they are submerged.
Let sit on the counter at room temperature to marinate for 12 hours before using.
Keeps for 2-3 days unrefrigerated. Please pay attention to your climate. In hotter climates, its best to keep refrigerated.
